Recalentado in Mexico

The amount of food leftover after New Year’s Eve dinner in Mexico is enormous: a small battalion could feed on the leftovers. Recalentado means precisely that, leftovers of the day before. But not only that, it’s also a Mexican tradition following the baroque style of our culture, with a taste for endless riot and for indulgence in eating, drinking, and talking. Recalentado is the ideal excuse to celebrate a second party the day after especially with half of the family who did not attend the prior dinner. Thus it’s the feast’s echo, the second part of a love story between the diner and the dishes.  

This second encounter is usually sweeter than the first. Since rest, circumstances and memory transform the object of affection into a better version of itself, leaving a more profound mark. There is undoubtedly an emotional component to the equation, but are there scientific reasons for such a phenomenon? The answer lies in the very nature of the dishes prepared in a Mexican kitchen: the abundance of spices, proteins, fats, and water are the perfect combination for the reheating to become even tradition. 

As a metaphor for life, Recalentado teaches us that there is always another opportunity, a sequel or second part, which can be better than the first.
